For the crust I used 2 chicken breasts, boiled, shredded, then baked at 500 for about 7 minutes to dry it out. Then I mixed in two eggs and 1/3 cup of parmesan cheese and spread it evenly on my pan, then I added the toppings (cheese and pepperoni) and baked again for 10 minutes. Pros: the crust is very tasty and flavorful but not so over powering that it taste more like chicken than pizza. It holds up better than expected. I can pick it up and eat it like pizza. Cons: it was very dry. It's probably my fault for using grated parmesan from the can rather than the freshly shredded as recommended. The chicken was a little chunky. I might run it through a blender next time.
