    Pumpkin protein keto waffle: This waffle is so good! It’s fluffy and delicious. The pumpkin provides good fiber. Preface: I sometimes add Lily’s chocolate chips to mine. This is optional. I also use a specific brand/type of vanilla protein powder and I only know how the waffle turns out with that one. I can’t guarantee how it will turn out with whatever you use, although I imagine it’ll be similar. Ingredients: 2 eggs (140 calories) 1/4 cup pure pumpkin (canned or fresh — 25 calories) 1/2 tsp vanilla extract 1 scoop of protein powder (I use Designer Protein LITE Natural Protein Powder - 9.03oz, vanilla cupcake flavor. $7.99 at Target, 60 calories — I highly recommend this one, but you can use whatever vanilla protein powder you like) 1 tbsp powdered erythritol 1/2 tsp pumpkin pie spice 1/2 tsp baking powder 1-2 tbsp Lily’s chocolate chips (optional) ​ Directions: ​ 1. Add eggs, pumpkin, and vanilla extract to small mixing bowl. Mix. 2. Add protein powder, sweetener, pumpkin pie spice, and baking powder to wet ingredients. Mix completely until batter is smooth. 3. Fold in Lily’s chocolate chips (optional) 4. Add batter to preheated, greased waffle iron 5. Cook for 2-3 minutes or until golden and ready 6. Top with butter, sugar free syrup, chopped pecans, and/or whipped cream (all optional) 7. Enjoy! Nutrition: Calories without optional add-ons: 225 Net carbs without optional add-ons: 4.5 (1 for protein powder, 3.5 for pumpkin) Make sure to adjust depending on what you decide to add!
