Oil-Free Creamy Mushroom Pasta – Defintely reccomend (recipe in comments)

    Ingredients: - 2 Red Onions - Half a veg stock cube in half a pint of water - 250 grams of mushrooms - 3 tablespoons of Soy Sauce - 250 grams of pasta Sauce: - 100 grams of toasted cashews - 500ml of Soya Milk - Juice of half a lemon - 1 teaspoon of sea salt - 1 teaspoon of garlic powder Garnish (optional): - 1 chopped red chilli - oregano Directions: Heat a pan really hot with no oil. Chop 2 small red onions and 2 cloves of garlic and add them to the dry pan. Cook on the high heat and when you see the onions starting to stick to the pan, add splashes of the veg stock in small amounts. Cook for 2 minutes, adding a little splash of veg stock whenever the ingredients start sticking again. Add the 250 grams of mushrooms to the pan, again adding splashes of stock when needed. Add the 3 tablespoons of Soy Sauce, cook for a couple more minutes, continuing to add the veg stock sporadically. (You probably won't end up using all the stock, I don't.) Take the pan off the heat. Meanwhile cook the pasta for 10 minutes. While doing this, make the sauce; Toast 100g of cashews for a few minutes until they start to brown. Blend the lightly toasted cashews, soya milk, salt, lemon juice and garlic powder. Once blended, put the pan of onions and mushrooms back over the heat and add the sauce. Leave a few minutes while occasionally stirring until the sauce thickens. When it does, add the pasta with a slotted spoon. Do this rather than draining the pasta, as a few drips of water won't do the sauce any harm! Serve with a garnish of oregano and chopped chilli if desired.
