Delicious Christmas Sides for a Vegan Christmas Dinner

    Braised sweet red cabbage & Potato dumplings ​ ​ Ingredients Cabbage: 1 red cabbage 2 apples 1 big onion 2 tbsp olive oil 500ml red wine or grape juice if made for children 2 tbsp balsamic vinegar 1 tbsp brown sugar Orange zest Salt & Pepper 3 laurel leaves 1 tsp ground cloves 3-4 cardamom pods 4-5 allspice pods Directions Cabbage: 1. Slice the red cabbage into thin stripes, cut the thick stem off 2. Dice the onion and cut the apples into small cubes 3. Heat a pan on medium heat, add 2 tbsp olive oil 4. Add the onions and let cook for 5-6 minutes 5. Turn the heat on low-medium and add all the remaining ingredients 6. Mix, put the lid on and let simmer for 3 hours Ingredients Potato Dumplings: 1kg Potatoes 200g Potato starch ½ - 1 cup water Pinch of nutmeg 1 tsp salt Directions Potato Dumplings: Boil the potatoes until done (~25 min) Add the potatoes in cold water and peel them Mash them with a fork in a big mixing bowl Add the salt, nutmeg, starch and water Form into a big dough Wet your hands (important) and form small balls Bring 2l water with some vegetable stock to a boil and reduce to low-medium heat Add the dumplings for around 20 min, until they float on top Enjoy :)
