Chef John released a spread today



It looks really keto friendly with the only real carb in it being Calabrian Hot Peppers, and upon looking it up is about 1 net carb per 10 grams, so I am guessing between 4-5 carbs from that for the whole two cups of spread.

Ingredients for about 2 cups Spicy Salami Spread (Nduja):

4 ounces sliced or diced pancetta, cooked, fat reserved

1/3 cup seeded hot Calabrian peppers

3 tablespoons Calabrian pepper oil from the jar

12 ounces sliced salami

1/4 room temp butter

2 or 3 tablespoons olive oil, or as needed to adjust the texture to your liking

    Love Chef John. I actually thought about him recently and was thinking how cool it would be if he had a line of Keto videos. Someday I want to adapt his Nashville Hot Chicken to Keto. That shit is on another level.
