    Keto Empanadas ​ Your family is have some pasta with bolognese sauce? You know you can use that same bolognese sauce to make some amazing Keto Empanadas! The main part will be to make the so called FatHead dough, mostly out of Mozzarella cheese and some Almond flour. We are gonna end up with 8 servings of Empanadas and I'm suggesting you make a sauce out of heavy cream and some Mayo. These are one of the best dishes I made so far, it turned out to be crispy on the outside and fluffy on the inside. Enjoy! ​ Ingredients (8x Empanadas): ​ 170g shredded Mozzarella 85g Almond flour 2x tbsp of Cream Cheese 1x Egg Oregano (or other spices per your taste) Himalayan salt Bolognese sauce (leftovers in my case, use about 1/2 spoon per empanada) Cheddar cheese Green Olives ​ ​ Preparation: ​ Mix the shredded Mozzarella with the Almond flour and the Cream Cheese. Get your hands dirty and combine it really good. Microwave the mixture on the highest setting for 1 minute. Then take it out and mix it a bit more. Return it to the microwave for another 2 minutes on the highest setting. Take the dough out, add the Egg, Oregano and some Himalayan salt. Mix it with your fork, then get your hands busy. You need to kneed the dough as long as you can so it will combine nicely and it wont break easily. Sprinkle your hands with some extra flour so they wont get to sticky. After some nice kneading, put the though in the plastic wrap, and refrigerate it for 10 minutes so it settles down. Then take it out, spread it a bit and cut it into 8 same sized pieces. Spread some flour on the surface, and spread the dough in to some circular shapes. Add about 1/2 spoon of Bolognese sauce per empanada, add a bit of cheddar and a slice of olive to the mix. Close it off with your hands, and use the fork to seal it. If you end up placing to much of the sauce inside and the dough shows some crack on the top, do as I did and before placing it in the owen, put a bit of cheddar on the top. It will melt and close any gap ;) . Take the Empanadas, and put the in the owen for about 10 minutes on 220C , just until they start to get that nice golden color. I suggest you make some nice sauce to go with it in a form of heavy cream and some mayo. And do enjoy them! :) ​
