My favorite vegan nacho cheese

    Vegan nacho cheese 1/2 cup cashews or almonds if you prefer, soaked overnight or boiled 10-15 min 1 cup water 3 tbsp tapioca starch or tapioca flour 3 tbsp nutritional yeast 2 tbsp lemon juice 1 1/2 tsp salt 1 1/2 tsp white miso paste 1 tsp paprika 1/2 tsp onion powder 1/4 tsp turmeric 1/4 tsp garlic powder 1/2 - 1 cup of your favorite salsa. I use Kirkland organic salsa from Costco Add soaked nuts to a blender along with all remaining ingredients except salsa. Blend until smooth. It will be watery. Transfer to a saucepan on med - high heat, stirring constantly. It will begin to clump up but will smooth out the more you stir. Once it has thickened, about 5 min, add the salsa and stir. If it is too thick you can thin it out by adding a bit of water until it is the desired consistency. I hope you all enjoy this recipe as much as our family does. WARNING * you may want to make a double batch because you're going to want to put this on everything!
