    Ingredients: 4 poblano peppers (halved) 8 oz cream cheese. 1 cup cheddar cheese. 6 slices of bacon. Ranch seasoning to taste How: Preheat oven to 400°F. Lightly cook bacon. Soften cream cheese and combine with cheddar and ranch. Once bacon is cool and firm, tear into bite sized pieces and combine with cream cheese mixture. Stuff peppers and place on a foil-lined pan. Bake for 20-25 minutes. Serves 4 397 cal 9.4 g carbs 32.4 g fat 14.9 g protein Poblanos are kind of high in carbs, so you can always use jalapenos instead, which brings the carbs WAY down. I made these for me any my boyfriend who can't handle super spicy things and wanted to make sure he could actually eat them. They turned out great and we ended up eating just these as a meal instead of a side dish.
