    This is my first attempt to make tortilla with carbalose and WPI 5000 and wheat gluten. I am still working on it, so while it's not perfect, it tastes decent! WPI stands for wheat protein isolate. Ingredients: 1 -3/4 cup of flour mix (7/8 cup +5tbsp carbalose, 7tbsp WPI 5000, 1tbsp of wheat gluten or WPI 8000) 1 cup water +2tbsp water 1/2tbsp salt 1tbsp of onion powder and garlic powder Instruction: Mix everything together and knead it until the dough is elastic and can be stretched. Divide it into 8 balls and roll it to 5 inch diameter dough. Grill it on a pan. Done! Taste: Because carbalose flour has already wheat gluten in it, it has some sour taste. One thing I am missing is Resistant corn/wheat starch which is supposed to help the dough taste like an ordinary flour. Maybe almond flour to add some fiber. Net carb: <3g
