    This is my first near-successful carbalose flour and wheat protein isolate 5000 from Netrition. Here is the recipe: Ingredients: 2 cups of flour (1 cup + 6tbsp carbalose flour NOT carbquik,1/2 cup wheat protein isolate, 2tbsp vital wheat gluten) 1 cup + 1tbsp of water around 110F. 2-1/4tsp yeast. 2tbsp of sugar(not counted in carb since it's used by yeast) 2tbsp of melted butter optional: 1scoop(2tbsp) of unflavored whey protein 1/2tsp salt. Instruction: 1) Bloom the yeast by dissolving sugar and yeast (and whey protein) in the water for 10 min. Warm the over at 170F 2) Mix all the ingredients together. The flour mix here may be more dense than ordinary flour, so if you think the dough is too tough, then add more water. This is really important for gluten formation and rising. 3) Knead until it can form thin film. rest the dough for 10 min. 4) Once the oven is "warmed", open the oven door couple times to reduce temp to around 110-120F. Divided the dough into 12 pieces. Cover the dough and proof it in the oven for 30 min. 5) Bake at 350F for 12-16 min.
