I've been getting some amazing recipes from you all for the past few months, and was so happy with this meal that I thought I'd share! Dough: 1.5 cups mozzarella 1 oz cream cheese 3/4 cup almond flour Melt mozzarella and cream cheese in microwave at 30 min. intervals until completely indistinguishable and melted. Mix well and knead in almond flour with hands. Roll out dough into an elliptical/rectangular shape in between two pieces of parchment paper. I used an empty wine bottle to roll to about 1/4 inch thickness. Fill with whatever toppings suit you. I used chopped cooked chicken thighs, Serrano peppers, shredded cheddar cheese, garlic powder, minced onion, bacon bits, and sugar free BBQ sauce. Line toppings down the middle of your dough. Fold end over like a burrito, then cut side dough into inch or so pieces and fold over like a braid until the calzone is completely covered. I sprinkled oregano on top. Transfer parchment paper and calzone to a baking sheet and bake for 450 degrees for 15 minutes. Delicious!!! Can't wait to try with other ingredients. Pepperoni, sausage, steak, tuna, egg, feta, parmesan, pepperoncinis, bell peppers, etc.
