    Experimentation yields another tasty meal! Ingredients for the meatballs: -1/2 cup of water -1.5 lbs of ground beef (I did 85/15) -2 tbl of fresh, chopped parsley -1/2 tsp oregano -1 1/4 tsp onion flakes -1/4 tsp garlic powder -1/2 tsp black pepper -1/4 tsp kosher salt -2 eggs -1/2 cup almond flour (or 1/3 cup coconut flour) -3/4 cup grated Parmesan For the cloud bread: -3 eggs -3 tbl cream cheese -1/2 tsp garlic powder -1/4 tsp oregano -~ 1/2 cup shredded mozzarella (preference, optional) -1/8 tsp cream of tartar Sauce: -Rao’s Marinara sauce ~ 1 cup -1/2 cup shredded OR grated mozzarella (Optional) 1/4 tsp oregano These ingredients listed cook for two people, and made both a lunch and dinner for those two people. Consider reducing amounts if cooking for one. This recipe produced 12 larger meatballs and 6 garlic bread biscuits. Overall, I think this is about .7g carb a meatball, all varying with the amount of sauce you put on.

    Instructions: Meatballs: Mix ingredients listed above in a bowl, roll into balls. If oven bake: preheat to 350, place meatballs on pan and bake for ~ 20 minutes. If pan fry, grease a frying or sauté pan and cook on medium or low heat until cooked through. (If you use bacon grease, it presents a wonderful addition in flavor) Cloud garlic bread: Separate the eggs. Preheat over to 300. Put cream cheese, garlic powder, egg yolks, and oregano in on bowl, and egg whites in the other with the cream of tartar. Beat mixture with egg yolks first, place them aside, then beat the egg whites until hard peaks. Fold together and place on a pan and put in the oven. After about six minutes, get the pan out and put the shredded mozzarella on top (This is optional, I love cheese). Put back in oven and continue baking for another 10-15 minutes. Sauce: Warm up the sauce in a small pot, and mix the mozzarella in while it’s warm to melt it down and make it more creamy. (I like to add a little bit of oregano, maybe a 1/4 tsp for a little bit of flavor) After all 3 are cooked, you have yourself a meal. I’ll definitely be making this one again.
