    Hi! This is a keto take on the Czech traditional festive/Christmas meal: schnitzel with potato salad. Ingredients (serves 2): Breading: - 2 tbsp almond flour - 1 egg - 200g crushed blanched almonds Meat: - up to you: chicken breasts, pork, or veal all work well 'Potato' salad: - 1/2 large cauliflower - 1 medium carrot - 1 medium parsley root - 1/2 medium celery root - 2 hard boiled eggs - 2 gherkins - 2 tbsp mayonnaise - 1/2 tbsp dijon mustard - 2 tbsp greek yoghurt - 1 tsp lemon zest - 1/2 tbsp lemon juice - salt & pepper Instructions: Schnitzel: 0. Tenderise the meat properly! 1. Coat the meat gently in almond flour 2. Wash the meat in the beaten egg 3. Coat in the crushed almonds 4. Deep/pan fry Salad: 1. Boil your vegetables (exc. gherkins ofc.) so that they're cooked but still firm to touch. Cauliflower might need a different amount of time than the roots. 2. Grate your vegetables, gherkins, hard-boiled eggs into a large bowl 3. Add in the mayo, the yoghurt, and all the seasoning and mix thoroughly but don't mash the veggies too bad 4. Let rest fridged overnight Result: The schnitzel is absolutely incredible, you won't be able to tell a difference. The salad is very decent too, it definitely satisfied my craving. That being said, the cauliflower doesn't replace the potatoes perfectly, not only in the taste but mostly in the texture. I've heard that roasting the cauliflower instead of boiling works wonders so might try that next time. All in all, a great keto replacement of this quintessential Czech festive delicacy!
