    This low carb tres leches cake was delicious! The original recipe calls to use one of their other recipes for the topping but I made a whipped cream from scratch. Recipe from [Sugar Free Mom](https://www.sugarfreemom.com/recipes/sugar-free-low-carb-tres-leches-cake/) Ingredients for cake: * 1/2 cup coconut flour * 1/2 tsp baking powder * 1 cup Swerve sweetener or other granulated sugar free substitute * pinch salt * 6 eggs separated * 1/2 cup butter melted, cooled * 1 tsp vanilla extract * 1 tsp vanilla stevia * 1/2 cup unsweetened coconut milk or unsweetened almond milk * 1/2 cup Half & Half * 1/2 cup heavy cream * optional: 1/4 cup Brandy Ingredients for topping: * 1 cup heavy whipping cream * 1 tbsp Swerve sweetener or other granulated sugar free substitute * 1 tsp vanilla extract Instructions: 1. Preheat oven to 375 degrees F. 2. Line a 9 inch spring form pan with parchment paper. 3. Whisk the coconut flour, baking powder and 1/2 cup Swerve together in a bowl. Set aside. 4. Place the egg whites into a stand mixer with the remaining Swerve and blend until stiff peaks form. 5. In another bowl whisk the egg yolks, melted (but cooled) butter, vanilla extract and vanilla stevia. 6. Fold the coconut flour mixture into the egg yolk mixture. 7. Gently fold in the stiffened egg whites in small batches into the coconut flour batter. 8. Pour batter into pan and bake for 30 minutes. Allow to cool for about 20 minutes before removing from pan. 9. Take a skewer stick and make holes in cake. 10. In another bowl whisk together the coconut milk, Half & Half, heavy cream and optional brandy. 11. Pour this over the cake into all the holes. Allow to stand for 30 minutes. 12. Refrigerate for at least one hour. 13. While refrigerating, whip together the ingredients for the whipped cream until stiff peaks form. 14. Frost and serve! Nutrition (if using sugar free cannoli from sugar free mom website): 1 slice (12 slices per cake) Calories: 262; Net Carbs: 3.5
