    In a search of some amazing flavors, I decided to do something like this - Indian Pepper Boats. Basically we are making some nice minced mixed meat with some predominant Indian spices and stuffing them in nice Red Bell Pepper "boats", topping it of with some shredded mozzarella. The recipe and the ingredients are meant for 5 portions (people), so you can either scale it down, or make it as a meal prep. ​ Ingredients: ​ 600g Mixed Minced Meat 5x Red Bell Peppers Shredded Mozzarella Onion Olive Oil 2-3 cups Tomato Sauce Garlic Powder Curry Turmeric Himalayan Salt Black Pepper ​ Preparation: ​ Heat up the frying pan and add some chopped white onion and some olive oil. Fry until golden brown. Then add the mixed minced meat and break it into small pieces. Spice it up with some Himalayan salt, black pepper, garlic powder, a lot of turmeric and a lot of curry. Mix it all around and let it cook until the meat gets color on all sides. Once that happens, add 2-3 cups of tomato sauce and mix it a bit so that the meat isn't dry. Once you can move the meat around with any liquid on the frying pan, the mix is done. Now, I suggest to set it aside for a day in the refrigerator, so it hardens with all the juices a bit, but if you want you can go straight to filling the peppers. Take the red bell peppers, remove the stems and seeds. Cut them in half and hollow them out. Fill them with the meat mix, make sure its in all the crevices. Top it off with some nice shredded mozzarella cheese. Preheat the oven to 200C and place the "boats" inside. Use a baking paper when placing them and cook them in the oven for around 15-20 minutes. If you want your peppers to soften cook a bit more. Cook less for more crunch to them. ​ Serving suggestion: Serve 2 boats with some heavy cream, fresh tomatoes and a boiled egg. ​
