    [Chicken and Bacon Casserole](https://www.geniuskitchen.com/recipe/low-carb-chicken-and-bacon-casserole-311983) * 3lbs boneless skinless chicken breasts * 1⁄2lb bacon * 2cups broccoli * 8ounces provolone cheese, shredded * 1cup chicken broth * 1⁄4cup heavy cream * 1⁄4cup Dijon mustard * 1teaspoon oregano * 1teaspoon basil **Instructions** 1. Pre-heat oven to 350. 2. Cut bacon into 1" pieces and fry until mostly crisp. 3. Cut chicken into cubes and cook in a frying pan until it is no longer pink. 4. Place chicken and bacon into a bowl, and put in the fridge to cool. 5. In a mixing bowl combine broth, cream, mustard, herbs and salt and pepper to taste. 6. When chicken and bacon has cooled most of the way, stir in shredded cheese and broccoli. 7. Place chicken mixture into a casserole dish, then pour sauce over the top. 8. If cooking immediately, place in oven and bake 25-30 minutes, or until cheese is melted. 9. To refrigerate for later, cover dish with tin foil and place in fridge. When ready to cook, pull casserole out of the fridge and preheat the oven to 350. Bake, covered for 30 minutes, then uncover dish and bake for another 10 minutes, or until the cheese is melted and the food is hot all the way through. [Chive Horseradish* Cauliflower Mash](https://peaceloveandlowcarb.com/chive-horseradish-cauliflower-mash/) * 1 large head of cauliflower * 5 chives, chopped, extra for garnish * 1/2 cup grated Parmesan cheese * 3 tablespoons butter, extra for garnish * 3 tablespoons creamy horseradish sauce, or 1 1/2 tablespoons prepared horseradish * 1/2 cup sour cream * 3 cloves garlic, minced * sea salt and ground black pepper, to taste **Instructions** 1. Over medium-high heat, steam cauliflower in a covered pot in 1 to 2 inches of water. Steam until the cauliflower is fork tender, about 15 minutes. 2. Turn off the burner, drain the water and leave the cauliflower in the hot pot. This will help pull some of the excess moisture from the cauliflower. This step is crucial to not having soupy cauliflower mash. 3. Once the excess liquid is gone and the cauliflower feels fairly dry, fork mash the cauliflower. 4. Add the chives, Parmesan cheese, butter, horseradish, sour cream, garlic, salt and pepper. Mash until all ingredients are well incorporated and the cauliflower is the consistency of mashed potatoes. 5. Garnish with extra chives and butter before serving.
