[https://www.paulmanacre.com/](https://www.paulmanacre.com/) Title: SoCaliANTe Company: Paulman Acre, Inc. Description: With a moderate blend of bhut jolokia and serrano peppers, SoCaliANTe is the milder black ant sibling to Hella Hot Sauce’s NorCaliANTe. Featuring fresh blackberries, black trumpets, black truffles, activated charcoal, and edible black ants (seriously), this jet-black sauce is an unassuming flavor bomb. Ingredients: Onions, Bhut Jolokia, Serrano Peppers, Water, Vinegar, Blackberries, Lemon Juice, Black Trumpet Mushrooms, Coconut Oil, Activated Charcoal, Edible Ants, Black Truffle Mushrooms, Salt, Garlic, Arrowroot Powder, Lavender. Smell: The very first thing I smell is the peppers, especially the serrano peppers as they both bring out an earthy and floral pepper aroma with a touch of sweetness coming from the ghost pepper. Then, you can pick up the Onion which is very strong in the aroma. Then you get start to pick up a fruity sweetness coming from the blackberries but then in the background of the sauce you get a big blast of umami aroma coming from the trumpet mushroom and black truffles as they bring out a blast of savory aromas. The vinegar and lemon juice are only slightly noticeable. Pour: The sauce is thick and has an extremely black color that I have never seen in a sauce before. Taste: This sauce is also extremely tasty and unique in comparison with NorCaliANTe. Initially you can taste the activated charcoal for a second, but then you get this strong savory earthy flavor coming from the onions, peppers, and mushrooms. The mushrooms leave you with a nice umami aftertaste while the blackberries, lemon juice, and ghost pepper leave you with a fruity taste in the middleground of the sauce. The coconut oil, arrowroot, and lavender bring out some extra flavor and help balance the sauce and tie everything together. Again, the black ants did not do anything to the taste for me, but it really had an effect in the mouthfeel as I could feel bits and pieces of ants in my mouth. This sauce would be great on everything but more so on red meats. I must give this sauce a 10/10 on flavor as well because its truly a unique and gourmet hot sauce and cannot be compared to NorCaliANTe because they are both completely different sauces in every single way except for the use of ants. If you can overcome the mind test that there are ants in the sauce, you are in for a treat! Heat: This sauce is much milder compared to NorCaliANTe as there is only serrano peppers and a little ghost pepper. The burn lingers for a bit but is not overwhelming. I would give this a 3.5/10 on heat.
