    Nutrition: 425 calories 4g net carbs Ingredients: - 10 asparagus spears - 5 thick cut (but can do thin) slices of bacon - lemon juice - pepper - 2 large eggs Directions: 1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. Pro tip: if you have a rack (like a cookie cooling rack) place in top of sheet to keep bacon out of its own grease. 2. Cut off bottom thick part of stalk on asparagus and drizzle the spears with some lemon juice if desired and sprinkle with pepper to taste. 3. Wrap 2 spears with one piece of bacon and put on rack/sheet (x5). 4. Bake for 20-30 minutes (depending on thickness of bacon) until asparagus spears are soft and bacon is crispy. 5. Pull out of oven and let cool while frying an egg or two. 6. Put the tater in her box so she doesn’t eat your bacon.

    This is fantastic stuff. If you put on the broiler for the a couple of minutes on each side before you pull it out of the oven it helps crisp up the bacon. The tips get a little blackened, but as long as you don't mind it crisping the asparagus tips too it comes out fantastic. I make this as a side dish ... probably more than I should.
