Happy Wednesday!! Tonight I made a few batches of pumpkin spiced waffles to freeze. This way on weekends when I treat myself for breakfast I don’t have to go through all the preparation. All I have to do is pop them in the toaster oven and voila! Waffles on demand! Recipe in comments. :)

    Recipe (16 mini waffles) is: 1 cup all purpose white flour A flax egg (2 TBSP ground flaxseed to 6 TBSP water. Stir together and let sit for 10 minutes) 3 tsp’s baking powder 1.5 tsp’s baking soda 2.75 tsp’s cinnamon (1x2 + 1/2 + 1/4) 1.75 tsp’s pumpkin spice (1 +1/2 + 1/4) 2 tsp’s coconut sugar 1/2 tsp salt 1 cup + 2 TBSP soy milk 3/4 cup pumpkin puree 2 tsp’s of vanilla extract 1 TBSP apple cider vinegar (lightly mix in at the end once everything is thoroughly combined together). Start with the dry ingredients. Only add the wet ingredients once all the dry ingredients are distributed evenly amongst one another. I added them in this order (one by one); soy milk, flax egg, vanilla extract, pumpkin puree and lastly the apple cider vinegar.
