Edit: **Bavarian cream**: *Ingredients*- 1qt heavy cream 6 egg yolks 1 cup erithritol 1/2 cup water 3 tbsp unflavored gelatin 1 Cinnamon stick 2 Star anise pod 3 cloves 2 tbsp cinnamon powdered Rind of 2 limes 3 tbsp chia seeds. 2 tbsp vanilla *Directions* Bring half of the heavy cream to a boil with the whole spices and lime peel. As soon as it comes to a boil, remove from heat and let sit until room temperature. Bloom the gelatin in water. Whip the other half of the heavy cream until stiff peaks are formed. Add powdered cinnamon and whip to combine. Mix egg yolks, vanilla, and erithritol. Whip to combine. Bring cream mixture back up to boil, and temper the yolks. Add gelatin. Strain the mixture and simmer on low constantly stirring until thick. Remove from heat and add the chia seeds. Let cool to room temp. Fold the custard into the whipped cream, place into mold and cool completely in fridge.
