Cast Iron Cauliflower Carrot Hummus

    We were starting to get tired of chickpea hummus, so we created something we like even better. Ingredients: -1/2 head of cauliflower -6 large carrots -Choice of oil (we used sunflower) -1/4 cup water -1 tsp salt -1/2 tsp cayenne -1/4 tsp cumin -3 cloves garlic -2 tbsp tahini Directions: 1. Preheat oven to 420 degrees. 2. Place 1/2 head of cauliflower & 6 large carrots into a pure iron pan or large baking dish and drizzle with light layer of oil. 3. Bake for 40 minutes. 4. Remove and let cool - place all cauliflower, carrots, & all remaining ingredients into a food processor and pulse until dip is a creamy consistency similar to chickpea hummus. 5. Eat with your choice of veggies, chips, or crackers. Enjoy your day to the fullest.
