    Taco bowl: -one bag frozen, riced cauliflower -cumin, salt, and pepper to taste -one cup shredded cheese -one avocado, sliced -1/4 c. Salsa -raw, peeled, and deveined shrimp, as many as you’d like to use -two tablespoons sour cream -lime, cut into wedges -5 tablespoons oil of choice -two tablespoons butter -lettuce -Bell pepper Instructions: Remove stem from bell pepper and slice thin. Heat two tablespoons oil in pan on medium high heat. Add sliced peppers and salt and sauté until cooked to your preference. I like mine still crunchy. Remove from pan. Heat remaining oil in pan on medium high heat. Add cauliflower, salt, pepper, and cumin. Stir/sauté until cauliflower is heated and cooked, about 7 minutes. Sprinkle with cheese, place lid on pan, and remove from heat. While cheese is melting, add shrimp and butter to a separate pan and cook on medium high heat, stirring occasionally until pink and no longer translucent. Add salt to taste. In a bowl, add cauliflower as base. Top with lettuce, shrimp, sliced avocado, salsa, and peppers. Add sour cream and salsa and wedge of lime. Also delicious with cilantro or jalapeños. One bag of cauliflower makes enough for at least two servings for me.
