    Please excuse my plating! I wasn't planning on sharing this recipe when I was making the dish but it tastes SO GOOD that I feel like I have to share it with you all! Ingredients: pork ribs ---------- 1 lb coconut oil -------- 1 tbsp cooking wine ------ 1 tbsp (I used Shaoxing wine because it's traditionally used in Chinese dishes. 1 tbsp of it only has 1 gram of carb) soy sauce --------- 2 tbsp rice vinegar ------- 3 tbsp erythritol ---------- 6 tbsp salt to taste ginger ------------- 5 slices (optional, but it would get rid of the "porky" taste in ribs) Steps: 1. Chop the ribs into 2-inch pieces. (I bought pre-chopped ones from my local Chinese grocery store.) 2. Rinse out the blood in the ribs and pat dry with paper towel. 3. Heat up the coconut oil on high heat in a deep pan or a wok. Stir fry the ginger slices until its aroma comes out, about 1 minute. 4. Add the ribs and stir fry until they change color and slightly golden on either side. 5. Add in the sauces in the following order: 1 tbsp of Shaoxing wine, 2 tbsp of soy sauce, 3 tbsp of rice vinegar and 6 tbsp of erythritol. Stir fry until the sauce evenly coats the ribs. 7. Add boiling water until it covers all the ribs. Turn the heat down to medium to medium-low. Cover and simmer for 20 minutes. 8. After 20 minutes, add salt to taste if the dish is not salty enough. Turn the heat up to high and leave the pan uncovered. Stir constantly until the sauce thickens and coats the ribs. 9. Serve and enjoy! Notes: 1. You can always change the ratio of rice vinegar to erythritol depends on your personal preferance. 2. You can use the leftover oil in the pan to stir fry some veggies!
