    I made some chicken tonight, loosely based on [this recipe](https://www.dietdoctor.com/recipes/keto-chicken-garam-masala). Here's what I did: **Masala Chicken** * 5 chicken thighs * 2 - 3 Tbsp garam masala * 6 Tbsp Kerrygold butter * 1 13.5 oz can coconut milk * 2 Tbsp tomato paste * 5 Tbsp minced garlic (feel free to reduce this to suit your taste - I just really like garlic) * 1/4 cup sliced green onions * Salt and pepper, to taste 1. Season the chicken thighs with 1 - 2 Tbsp of garam masala, salt and pepper. Let sit for 30-60 minutes; 2. Preheat oven to 400°F; 3. In a large skillet, heat the butter over medium-high heat. Fry the chicken thighs in the butter until they brown, about 3 - 5 minutes per side, then place them in a baking dish. Sprinkle with some green onions; 4. Add another Tbsp of garam masala to the pan with the butter, then add the coconut milk and tomato paste. Stir/whisk to combine well, then add the garlic and continue to cook, reducing the sauce until it thickens enough to coat a spoon. Season to taste; 5. Once reduced, pour the sauce over the chicken thighs. Bake the thighs in the sauce for 20 minutes. Garnish with some fresh green onion. I had this with some cilantro-lime cauliflower rice. It was great, and the house still smells awesome hours later.
