    6 Chicken Thighs (boneless/skinless) 1lb Hot Sausage (watch the carb count, lots of brands add sugar) 8 oz Greens (I used a 50/50 mix of baby spinach and baby kale) 8 oz Sliced Button Mushrooms 4oz Cream Cheese In a 5 qt pan season the chicken thighs then pan fry in about 2 tablespoons of oil, set aside cooked chicken and add your sausage into the same pan, brown and crumble. Add your sliced mushrooms into the pan with the sausage and cook until soft, they will absorb a lot of the oil from the pan. Add your greens into the pan and salt them lightly (you may have to do this in a couple of batches, 8oz of fresh greens looks like a lot but it will cook down a ton, just pile as much as you can get in your pan, let it cook down, then add the rest in). Stir in the cream cheese, it will melt down and give you a nice creamy sauce. Shred the chicken with a fork and add it back into your pan. Makes 6 pretty generous servings at about 3.3 net carbs each. 20 for the whole pan.

    Pro-tip: If you're like me and have some (whole) mushrooms leftover after making this, set aside about a 1/2 cup (that's enough for 6 mushrooms, you may have to shred the chicken a bit more for this) mix in a tablespoon of extra cream cheese, remove the mushroom stems and add a spoon full of the mixture to each mushroom cap, and then bake them for about 10 minutes at 350 for amazing keto stuffed mushrooms.
