I just have to share tonight's dinner because oh man was it tasty! The sauce was simply: - A couple handfuls of mushrooms roughly sliced. - 1tbsp butter Sauteed until golden brown and weeping their juices a bit. Then add: - 1 can of tuna (drained) - 250ml Heavy Whipping Cream - 5 green onions diced up - A few sprigs of fresh dill and salt and pepper to taste. - a teaspoon or two or five of garlic powder Simmer for 5 minutes until tuna is heated through and sauce thickens up a bit as extra moisture evaporates. Add: - 1/2 cup parmesan cheese Stir together and reduce heat and allow to simmer on low. The cheese will likely cling to the tuna creating these fantastic cheesy tuna lumps that are super yum. Saute the zoodles in 1 tbsp of butter in a hot frying pan. Give them 5 minutes to cook a bit but watch them so they let off some liquid but keep the lid off so it will evaporate. Serve hot with a generous serving of your tuna casserole sauce on top.
