    I feel like his issue with xanthan gum is unwarranted but that barbecue sauce had WAY too much thickener. Hot sauce should not have the texture of jellied eels. Both xanthan gum and extract are perfectly fine incredients but a little does indeed go a long way and too much of either will give the taste or texture a disgustingly unnatural element.
