    Chicken meatballs with creamy cheddar spinach base: **Chicken meatballs:** * 1 lb ground chicken * 2 large eggs * 1 T coconut flour * 1/4 c shredded parmesan * 1 t rosemary * 1 t thyme * 1 t garlic powder * 1 t ground pepper * 1/2 t basil * 1/2 t oregano * 1/2 t parsley In a large bowl, combine all ingredients and combine using hands. Shape into balls about 1 inch in diameter. Should make about 16-20 meatballs. In a frying pan on medium high, add oil of choice (we use avocado oil) to cover the bottom of the pan. Fry meatballs on all sides browning for 2-3 minutes on each side. **Creamy spinach base:** * 2T butter * 1.5 t minced garlic * 4 c spinach * 1/3 c HWC * 4 T cream cheese * 2 T sour cream * 4 oz white cheddar In a large pan on medium heat, melt butter. Add garlic and let simmer for 2 minutes, stirring. Add spinach and stir until it reduces and wilts entirely into butter. It should reduce significantly. Stir in HWC until well incorporated. Add cream cheese and stir until it has melted into the mixture completely. Add sour cream and cheddar, reduce heat to low stirring continuously until it is all combined. Add to plate and top with meat balls. Sprinkle with parmesan cheese.
