    The best part of zucchini boats Is you can change up a few ingredients and have a completely different flavor profile. But here’s my recipe: Cut zucchini in half lengthwise and scoop out the insides and set aside. Drizzle some olive oil and garlic salt. Put in the oven at 400 degrees for about 25 minutes. While zucchini is in the oven: Sauté onion and garlic. Once onions are translucent, add 1 lb ground beef. Add salt, pepper, cayenne pepper, jalapeños (clearly I like spicy food), dried oregano. I also add some of the insides of the zucchini because why not. Take zucchini out of the oven and scoop your ground beef mixture inside each boat. Add 1 cup cheddar cheese and broil and deliciously melty. I topped with red onion, cilantro, green onion and tomato for some freshness and texture. Then squeeze a little lime on top and you’ve got yourself a meal!
