    You could use any curry paste here, but the ratio is important: this is much more curry paste to coconut milk than called for on package. The Maesri curry paste is salted, so beyond some fish sauce there isn’t need for a lot of seasoning. You can do this with just the three ingredients but I recommend doing it with the optional items, it makes it much more authentic. Ingredients: About 2lbs boneless skinless chicken thighs 4oz tin of thai red curry paste (eg Maesri brand) 16oz tin coconut milk (eg Chaokoh) Optional but makes it much better: Fish sauce (prefer Squid brand) Kaffir lime leaves Thai basil leaves Sliced red jalapeno Directions: Mix coconut milk and curry paste Bake with chicken at 450 in broad shallow oven safe saute pan till cooked (maybe 20min?) (chicken should be mainly but not totally submerged in coconut milk) Add fish sauce to taste Add shredded kaffir lime leaves, thai basil and red jalapeno Broil till caramelized on top and slightly reduced Serve with cauliflower rice
