Teriyaki Tofu Burger with Spicy Mayo

    **Teriyaki Tofu Burgers** **INGREDIENTS** 2 pita bread 200gr firm tofu 1 tomato 1 avocado 1/2 cucumber 1 spring onion 4-5 mushrooms (any type would work) micro greens for presentation **MARINADE** 1 1/2 tsp soy sauce 1 tsp maple syrup garlic & onion powder a drizzle of sesame oil ( a couple of drops will come a long way) salt & pepper 1 cup natural yogurt 1/2 cup mayo siracha sauce **PREPARATION** Start off by cutting the tofu into 2 patties. I like to grab an empty glass, and use it as a cutter to make round patties. It’s time to make the marinate. Mix everything throughly and add the tofu patties. Let them marinate for around 4 hours or overnight. Slice the fresh vegetables thinly, and set them aside. For the spicy mayo, mix the yogurt, mayo and siracha in a bowl. Once the tofu is ready, pre heat a non stick pan, add coking oil, and cook the tofu around 5 minutes per side, or until brown.
