    **Recette** Per Tacodilla * 1 flour tortilla [6g net carbs] (I used the Mission carb balance ones) * 74g steak or about 1/2 cup (I used leftover ribeye but feel free to add as much as you want) * Cheese. Approximately 45g of cheese or 1/3 cup. I used a 3 cheese blend of cheddar, Colby Jack and flagship. Again however, feel free to put as much as desired. 1. The hardest step here, make a steak or buy one. If you have your steak skip the bullet points *Ingredients: *1 12oz ribeye *3 cloves garlic *3 sprigs rosemary *Butter (2 Tbsp +) *Salt and pepper * I reverse seared a 12oz approx. 2in thick ribeye by first patting it try with a paper towel. After that I liberally seasoned it with salt and pepper on both sides, making sure to pat in the seasoning before flipping to season the other side. * Let it rest for approx. 40 mins. While it sits preheat your oven to 200*F. After 40mins, pop that boi into the oven and leave it there for approximately an hour, I usually do 50mins. * Go watch a movie or catch up on those episodes of GoT so you don't feel left out. * Anyway about 50mins later take it out of the oven and start prepping your pan. Set your stove to Hi and let it heat up, add an oil of your choice(with a high smokepoint) to the pan once the pan is quite hot. *Once you see a ring of smoke start to emit, stick your steak on that pan and let it sit for 1-1.5mins. Then turnover the steak and do the same to the other side. * Add 2tbsp of butter, cloves of garlic and rosemsry to the edge of the pan. Immediately start spooning that melted buttery fat goodness over the steak for ~15-30s then flip the steak over and do the same. *Remove the steak from the pan and let it rest for ~10mins, then chop it up however you'd like. 2. Chop your steak up into bitesize pieces. 3. Over medium hi, heat your tortilla for 15seconds and flip. 4. Once flipped you can reduce your heat down to med-low and start adding cheese+steak. 5. Wait for the cheese to melt and using tongs fold one half over the other like a taco, it should basically become a hardshell taco at this point. Nutrition Facts: 406 Calories, 27.2 g of fat, 20g of total carbs (13g of fiber), 34.5g of protein, 567mg sodium, 122 mg cholesterol I enjoy making quesadillas because they're simple as fuck and I only need to clean 2 dishes total. Add as much steak or cheese as you want just make sure to recalculate them nutrition stats. If you don't want crunchy quesadillas I would recommend going the Chipotle method of wrapping your tortilla with cheese and steak in foil and baking that thing for like 5mins.
