    1 red onion, diced. 500g chicken breast thinly sliced. 1 red Bell pepper, diced. Smoked Paprika. Half a tin of chopped tomatoes (approx. 200g). Cheddar cheese and sour cream (optional). Fry onion and peppers on a low heat until caramelised. Add chicken and 2 heaped teaspoons (approx) of smoked paprika. Add tomatoes and reduce. Add salt to taste. Melt in some grated cheddar cheese towards the end when chicken is cooked (optional). Scoop it into some crisp baby gem lettuce leaves and serve with sour cream on top. I serve it with some chopped cucumber mixed with mayo, lemon juice and habenero hot sauce.
