    Recipe: Brined chicken thighs for 2.5 hours in a simple brine using salt, black pepper and garlic cloves. Dry rub: seasoning salt, pepper, powdered onion and garlic Smoked for 4.5 hours and into the oven wrapped in foil for half hour. Let cool and shred (I toss the skins). Shell: Bring non-stick pan to medium heat. Take a handful of shredded sharp cheddar and add it to the pan in a circular shape. Brown on both sides. To form the shell, I used a spatula handle and draped the cheese over it. The cheese is pretty pliable when it’s warm, but you have to work fast. Topped with mixed greens and more cheese. Add your favorite sauce and you are good to go. (Posted earlier, but was removed because I didn’t add the recipe)

    Awesome! I half-ass it: make the shells, buy some taco bell, dump the taco contents into shells haha
