    The recipe makes enough for two keto breakfast sandwiches, so you can have one for breakfast and one for lunch, share with a fellow keto-er, or just eat both (and not be hungry again until dinnertime). Yield: 2 sandwiches **Ingredients** **Bun** * 1 tablespoon natural peanut butter, softened * 2 tablespoons unsweetened pureed pumpkin * 2 tablespoons almond flour * 2 teaspoons coconut flour (or additional almond flour) * 1 teaspoon baking powder * 2 teaspoons sweetener of choice * 2 tablespoons half and half (or heavy cream) * 1 egg * 1/2 teaspoon vanilla extract * 1/2 teaspoon maple extract * 2 teaspoons sugar free maple syrup (optional) **Filling** * 2 eggs * 2 ounces breakfast sausage * 2 slices of cheese **Instructions** **Sausage** 1. Divide breakfast sausage into two portions. Press into patties, and pan fry until cooked through. **Buns** 1. While sausage is cooking, combine all bun ingredients in a bowl and stir until well combined. 2. Divide batter into two lightly greased ramekins. Cook seperately in the microwave for 60-90 seconds, or until cooked through and no longer wet to the touch. 3. Cut each finished bun in half and toast until golden brown. **Egg** 1. Using an egg ring, scramble or fry an egg for each sandwich **Serving** 1. Assemble sandwiches with one egg, slice of cheese, and sausage patty each. Serve plain, or with sugar free jam or maple syrup. Macros for one sandwich: ~350kcal, 27g fat, 6.5g total carbs, 2.5g fiber, 4g net carbs, and 19g protein.
