    Prep 3 mins. Cook 15 mins. 1 1/2 Costco rotisserie chicken breast.4 medium cloves of garlic. 1 cup baby spinach. 1 cup heavy whipping cream. 1 1/2 cup chicken stock. 1/2 cup white mushrooms. Salt and pepper to taste. 2 tbsp tarragon. 6 tbsp butter. Lemon juice (I bought a small bottle to cut down on waste, and because I'm lazy), salt, and pepper to taste. 5 asparagus stalks, salt and pepper to taste. Three pans recommended, but you can get by with just two if you don't mind a bit of extra cooking time. I'm an aga aga style of cook, so dont expect too much precision here. You'll get a feel very quickly for what feels right in this recipe, it's very forgiving, Be sure to taste often because a lot of this is down to flavor preference. Everything can be changed or adjusted to suit your needs. I made this for two people. 1. Melt butter in both pans, and dice garlic while it's melting. 2. Cut up the chicken boob, and pop that and the garlic into the bigger pan. 3. Rinse mushrooms, and cut/toss them into the second smaller pan. Salt to taste. 4. Now that the chicken and garlic have a bit of color to them, sprinkle the tarragon in. 5. Mix it in well, and dump in your chicken stock. 6. Stir your mushrooms, making sure they get color. 7. After the chicken stock has reduced a bit, pour in heavy cream. Mix it well. 8. Pop in spinach and the mushrooms, salt, pepper, and lemon juice to taste. Cover, stir occasionally so the spinach gets battened down, but in generally leave this alone until it thickens a bit. 9. Remove from heat after a minute, and let rest for a few minutes. 10. Since you probably just used one pan, pop more butter in the other pan, and cook your asparagus. Salt and pepper it to taste. 11. Enjoy. You'll probably also have leftovers for lunches.
