Ok. Do you like the weird texture and overly sweet flavor of Little Debbie fudge brownies? No? Move on. If you do, try this recipe. It's very very similar. In fact, if you can figure out how to make the weird icing keto friendly, please let me know so I can add it to these next time. I just got a box of tagatesse and used it. It's amazing. Seriously. Also, I've been experimenting with lupin flour with mixed results. I think it works well here because it creates a fudgy textured dough. I added almond flour this time but honestly, I'll omit it next time. I think these would be even closer to that weird play dough-like gas station treat without it. And yes, I used both kinds of sweetener. If you don't like those boxed sugar bomb brownies, adjust to your taste. Oh. And yes, I am wandering between volume and weighted measure. I was in a hurry. Sorry. Ingredients 1 cup lupin flour 1/4 cup finely ground almond flour 1/2 cup butter, melted 1/3 cup baking cocoa powder 2 eggs, lightly beaten 1/2 tsp salt 52 grams tagatesse 1/4 cup erythritol 3 tablespoons sliced almonds Preheat oven to 350 degrees Fahrenheit. Prepare an 8x8 pan with parchment. Add melted butter and cocoa to bowl and mix well. Add sweetener, salt and eggs. Mix well then fold in lupin flour and almond flour. Place in prepared pan. Press down with hands or spatula. I used my hands. It's very dough like. Sprinkle nuts on top. Bake 30 minutes or until a toothpick comes out clean. Let cool. I got 16 squares. My macros are: 110 calories, 8.2 g fat; 5.8 g carbs; 4 g fiber; 1.8 g net carbs; 4.5 g protein. Please calculate your own. As I understand tagatesse, it has no glycemic impact but the label on mine says less than 1 g fiber per 4 g serving. It also reads 2 g sugar alcohols and 4 g total carbohydrates. So, I think it'll work well for me as it's very very sweet so a little goes a long way. If anyone knows more about this product, please share. Edited to include calories.
