Thanks to u/ketogeuse for naming this wonderful creation. I had some leftover lamb & sausage ragu, recipe: * 1 onion * 5 cloves garlic * 1 green or red pepper * 1 c red wine * 1 15 oz can tomato sauce * 1 c chicken stock * 1 lb lamb shank on the bone * 1/2 lb hot italian sausage * 1 bunch fresh basil * italian herbs, s&p to taste brown italian sausage and set aside. sautee chopped onion and pepper in oil until onion is translucent. add chopped garlic and sautee for 1-2 more minutes. deglaze with red wine and reduce slightly. add chicken stock and tomato sauce. add in lamb shank and reduce heat to a simmer. cook, stirring, 1-2 hrs until the lamb is tender and falls off the bone. remove bones, add in browned sausage and basil, and simmer another 15 mins or so until thick n' tasty. season to taste with dried italian herbs, crushed red pepper, salt and black pepper. i used most of the recipe in a low-carb eggplant lasagna, but what i had leftover I tossed in a pan with a handful of fresh spinach and mozzerella to bulk it up. then i fried two eggs and topped it with some oregano and chilli powder. bone app the teeth!
