    It’s been a rough week and my boyfriend and I needed a pick me up so we splurged a little bit and made our favorite meal from before we started keto. THE BUFFALO WINGS: http://www.wickedstuffed.com/keto-recipes/keto-buffalo-wings/ Ingredients -12 chicken wings -4 tablespoons butter -1/4 cup hot sauce -1 clove of garlic, minced -1/4 tsp paprika -1/4 teaspoon cayenne pepper -1/4 teaspoon salt -1 grind of fresh pepper Instructions 1. While your chicken wings are baking, add your garlic and butter to a microwave-safe bowl. 2. Heat up the butter and garlic mixture in the microwave or on the stove (microwave is faster!) 3. Once melted into a clear liquid consistency, add the rest of the ingredients and mix together. 4. When your wings are cooked, toss them all in a bowl together until coated. Makes 12 wings. 4 servings. 291 calories, 29.1g fat, 0.4g carbs, 0.1g fiber ^ the above nutritional info is from MyFitnessPal since the website doesn’t list it. We used the frozen store brand wings from Winn-Dixie and cooked them in an air-fryer. THE GARLIC KNOTS: https://alldayidreamaboutfood.com/low-carb-garlic-parmesan-knots/ Magic Mozzarella Dough: • 1/2 cup almond flour • 1/4 cup coconut flour • 2 tsp baking powder • 1/2 tsp garlic powder • 1/4 tsp salt • 1 1/2 cups shredded part skim mozzarella cheese 6 ounces • 5 tbsp butter melted • 1 large egg Garlic Parmesan Butter • 3 tbsp butter melted • 2 tbsp freshly grated parmesan • 2 tsp minced garlic • 3/4 tsp kosher salt • 1/2 tsp dried parsley Instructions Dough: 1. Preheat oven to 350F and line a large baking sheet with parchment paper or a silicone liner. 2. In a medium bowl, combine almond flour, coconut flour, baking powder, garlic powder, and salt. In a large saucepan, melt cheese over low heat until it's melted and can be stirred together. 3. Add butter, egg, and stir to combine. Stir in almond flour mixture until dough comes together (keep heat on low). It will still have some large streaks of cheese. Turn out dough onto a parchment-lined surface and kneed until uniform (this only takes a little kneading). 4. Divide dough into 16 equal portions. Roll each portion into a 7-inch log and tie gently into a knot. Place on prepared baking sheet a few inches apart (they will spread a bit). Garlic Parmesan Butter: 1. In a small bowl, whisk together butter, parmesan, garlic, salt, and parsley. Brush about half of the butter over knots before baking. Bake 15 to 20 minutes, until firm to the touch and golden brown. 2. Remove and brush with remaining garlic butter. Serve warm. Serves 8 (2 rolls each). I also kept the knots in the oven for more like 25minutes because the tops would not brown, probably because they were twice the size they were supposed to be. They still came out delicious though, and dare I say... MOIST. THE PIZZA DOUGH: http://scottserafin.co/keto/recipes/carls-fathead-pizza/ Pizza Dough   Ingredients -1 ½ cups Shredded Mozarella Cheese   -2 tbsp Cream Cheese   -¾ cup Almond Flour   -1 pinch Garlic Salt Instructions 1. Put your pizza stone or cookie sheet in the oven. Preheat the oven to 450 degrees F. 2. In a microwave-safe bowl, add in the mozzarella and cream cheese. 3. Microwave for 15-30 seconds at a time, and stir with a fork. 4. Once you can no longer distinguish the shredded cheese, add in the almond flour. Knead the almond flour into the cheese and make it into a well-blended ball of dough. 5. Place your ball of dough on a large piece of parchment paper. Use another piece of parchment paper and a rolling pin to flatten out your dough. I try to get my dough down to about 1/8" to 1/4" thick. (Save the second piece of parchment paper, you'll need it later) 6. Sprinkle some garlic salt across the dough. Use a fork to poke holes all around your crust and put in the oven. 7. Bake the dough for 8-10 minutes until you get a nice dark brown bottom. Remove from the oven 8. Flip your cooked dough onto the second sheet of parchment paper. Load your pizza however you like with all of your favorite sauces, cheese, and toppings. Bake or broil your pizza for another few minutes until your cheese is melted and starts to brown.
