    Carb breakdown: Tilapia - 0 Rice - 1 per 3/4 cup. Avocado ranch - 1 carb per tablespoon. Bacon - 0 Other veggies - vary based on what you use. Recipe: Tilapia rub: cayenne (as much as you want this varies), garlic powder, paprika, cumin, Lowry’s, black pepper. Preparing tilapia: completely coat one side of the tilapia with seasoning and spray seasoned side with cooking spray (helps to blacken it). Cooking tilapia: set oven to 450 deg Fahrenheit and spray a baking sheet with cooking spray. Lay tilapia SEASONING SIDE UP on baking sheet and put into oven for 12 minutes. After 12 minutes, turn broil to high, and cook until the top of the fish begins to dry out a little bit. At this point turn the oven off and let sit in oven for 4 minutes. Avocado ranch: 1 full avocado. 4 tbs buttermilk ranch dressing. Pinch garlic powder, cumin, and salt and pepper. Put all ingredients into food processor and process. The thickness is up to you. If you want it a bit thinner, use almond milk to thin. Bacon bits: slice bacon into strips lengthwise, then cube width wise into very small pieces. Cook on medium high heat until starts to brown, then add 1/2 tbs butter and 1/2 tbs water to tender the fat. Cook until all pieces are brown, and take off heat and empty onto a paper towel to get excess grease off. Cauliflower rice: one bag of cauliflower rice, dump entire bag into a pan over medium high heat and heat for around 12 minutes or until heated through and all excess water is cooked off. Note: the bag says 5 minutes, 5 minutes is not even close to enough time. Extras: you could put any Keto friendly vegetables! Onions, tomatoes, broccoli, spinach! This was a super fun experiment to try to eat more cauliflower rice because I’m not a huge fan, but used to be a huge rice guy. This has around 6-8 carbs per serving (3/4 of rice). Other side note, I’m down 31 pounds from 341 to 310! Looking forward to seeing a 2 again on the scale. KCKO!
