    Pecan Crusted Salmon Ingredients: 4 – 6oz. salmon filets Coating: 1/4 cup – mayonnaise 1/2 Tbs – apple cider vinegar 1/2 tsp – Dijon Mustard 1/4 tsp – garlic powder 1/4 tsp – lemon juice Liquid sugar substitute = to 2 tsp sugar Pecan Crust: 1 cup – ground pecans 1 tsp – salt 1/2 tsp – ground black pepper 1/4 tsp – cayenne pepper 2 Tbs – unsalted butter, melted Per serving (recipe divided by 4): 599 cal. / 46.59g fat / 1.07g net carbs / 39.93g protein Directions: 1. Preheat oven to 450°F. 2. Add ground pecans, salt, black pepper, cayenne, and butter to bowl and mix together. 3. In a separate bowl, mix mustard, vinegar, mayo, garlic powder, lemon juice and sugar sub. 4. Cover a baking sheet with parchment paper 5. Place the salmon filets on the parchment paper, skin side down. 6. Evenly spread the mustard mixture over each salmon, using your hands to rub the mixture over the salmon on all sides. 7. Distribute the pecan mixture over the top of each fillet. 8. Bake for 7-10 minutes, depending on how well done you like your salmon. (If you find that the topping is browning more than you’d like before the fish is cooked through, loosely cover the salmon with foil.) Serve hot.
