    INGREDIENTS: 6 Large Eggs 2 oz cream cheese 1 4 oz package crumbled feta cheese 1 cup frozen spinach, thawed and squeezed dry 1 pinch nutmeg Salt and Pepper (I prefer white pepper for this) INSTRUCTIONS: Set up sous vide device and preheat water bath to 172°F/78°C. Put eggs, cream cheese, half of the feta and the seasonings in a blender and blend until smooth. Scrape sides if necessary. Grease 5 8 oz wide mouth jars or 8 4 oz jars Divide spinach and reserved feta evenly among jars. Pour egg mixture into jars making sure to wipe and drips of the rim. Screw lids on tight and shake to distribute ingredients evenly. Then loosen lids very slightly and put in water bath for 1 hour. If serving immediately they can stay warm in the water until ready. Finish under broiler or with torch if desired. Allow to cool to room temperature before refrigerating. Resist the temptation to put in cold water, the jars may crack.
