This turned out way better than I expected to be, plus it’s totally vegan if anyone out there wanted a meat-free recipe. Ingredients: 1/4 cup unsweetened shredded coconut 1 tbsp flax meal 1 tbsp hemp seeds 1 tbsp almond meal 1 tbsp chia seeds 1 tbsp coconut butter (I added this at the end) 1 cup unsweetened almond milk A little dash of Lakanto sugar-free maple syrup (at the end) A sprinkle of cinnamon Mix all ingredients into a small saucepan and cook on low until reduced to your liking! Stir in coconut butter and syrup (or sweetener of your choice) Macros: 31.5F/5g netC/10g protein 390kcal Seriously tastes amazing—reminiscent to Dino egg oatmeal from childhood. Try it out! (Also you can omit chia seeds if you want a slightly less gelatinous consistency, I might try it next with an extra tbsp of another seed/almond meal but of course this will change your macros)
