    Cheap, easy to make and store, and taste good cold! I love these things (and so does my 4yo who hates eggs)! #Recipe# ##**Ingredients**## -6 strips of bacon cut in half -11 eggs -minced onion (if you use fresh, you will want to saute them with some butter first. I used dried.) -shredded pepper jack (~3oz) -grated Parmesan ##**Directions**## -Fry the bacon, set aside (if you're using fresh onion, now would be the time to saute that as well). Use bacon grease to grease a 12 muffin tin. -Beat eggs together until all one consistency. Pour into tin filling cups roughly 1/2 full. Make sure cups are evenly filled. Salt and pepper each cup to taste. -Tear bacon into small pieces and put into egg-filled muffin cups, use 1/2 slice per muffin. Add onions evenly. Use shredded pepper jack to cover tops of egg-filled cups. -Cook at 400°F for 20-25 minutes until cheese browns. -Immediately remove from tin to plate. Sprinkle with Parmesan. Serve. ##**Storage**## Once muffins have completely cooled, they may be stored in an air tight container. I place then into cupcake wrappers, then put 2 in a sandwich bag and remove the air. You can reheat them for ~30 seconds at half power, but I actually prefer them cold as sometimes reheating makes them a little rubbery. **Note:** You can certainly add ingredients, just remember you may have to use fewer eggs for them to fit properly.
