Homemade healthy pot noodle! (‘beef’ & tomato flavour)

    **Ingredients** * 190g spelt or wholewheat noodles (I use these spelt ones by Biona) * 1/2 clove garlic or 1/4 tsp garlic powder * 1 carrot, shredded * 2 tomatoes, quartered * 1/2 red pepper, sliced thinly * 1/2 cup frozen peas (petit pois) * 1 cup chestnut mushrooms, sliced * 500ml vegetable stock OR one low-salt veg stock cube * 1 tsp yeast extract (I use this low salt one by Meridian) * 2 tbsp tamari * 1 tbsp tomato ketchup * Black pepper **Method** 1. Place the noodles in a saucepan and cover with the veg stock. If using a veg stock cube, add that and then cover with boiling water. Bring them to the boil and simmer for six minutes. 2. Meanwhile, saute the garlic, peppers, mushrooms and shredded carrot in a separate pan or wok, with a little water or veg stock. 3. Once the noodles are cooked, add them to the other pan with the veggies, along with the water/stock they were cooking in. 4. Add the tomatoes, yeast extract, tamari, tomato ketchup and some pepper and bring everything to the boil. 5. Add the frozen peas and simmer the noodles and veg on a low-medium heat until more of the liquid has absorbed (about 5-10 minutes). 6. Once the level of liquid is at your desired amount, serve the noodles, with additional ketchup to taste.
