Pork Tenderloin 2 (1 to 1 1/2-pound) pork tenderloins (also called pork fillet) Salt and fresh ground black pepper 2 tablespoons oil 3/4 cup wine, broth, apple cider or a combination 1 tablespoon unsalted butter Heat oven to 425 degrees F. Pat pork dry with paper towels. Then generously season with salt and pepper. Heat a tablespoon of oil in a large cast iron skillet or heavy-bottomed oven-safe frying pan over medium heat. You will know when the pan is ready when the oil shimmers. Add the pork tenderloins and cook, turning occasionally, until evenly browned all over. This should take about 2 minutes per side. Remove pan from heat and season pork with your preferred herbs and spices then transfer to oven. Roast 10 to 15 minutes or until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F. Transfer pork to a large plate and cover with aluminum foil. Let rest about 10 minutes before carving. If you want a pan sauce, place the skillet over medium heat, add apple cider or wine and simmer until reduced by half. Add butter then serve drizzled over pork. Cauliflower Risotto 1 12oz bag of frozen riced cauliflower (thawed) 6-8 mushrooms, sliced 1 tsp coconut or avocado oil 1 small onion, minced 1 small garlic, minced 1/2 cup white wine 1/2cup heavy cream 1/2 tsp himalayan pink salt Ground black pepper to taste 1/4 cup (1 oz) parmesan cheese, grated 1/4 cup (1 oz) mozzarella cheese, grated Preheat large non-stick skillet on medium high heat and add mushrooms. Cook for 5 minutes or until a bit golden, stirring frequently and watching closely not to burn. Transfer to a bowl and set aside. Return skillet to medium heat and swirl oil to coat. Add onion and garlic, saute for 3 minutes or until translucent, stirring occasionally. Add cooked mushrooms, cauliflower β€œrice”, wine, cream, salt, pepper and cheeses. Stir, cover and cook for about 4 minutes. Sprinkle with parsley and serve hot.
