    Aka โ€œen papillote,โ€ which is a steam-style of cooking. If you prefer crisp edges on your fish, donโ€™t cook it this way. Itโ€™s typically healthier though as it requires little to no fat to cook.

    Why would you even think of smothering fresh salmon with pesto, or any other sauce - only if it's been in the freezer for a year or farmed salmon junk!

    I'm almost certain most have no clue the proper term for cooking in paper. "En Papillote" or "In Parchment" for the typical person to understand. The French created it. I learned it in culinary school. Easy, but it has it's time & place. IMO salmon should be either seared/baked, or roasted. Delicate fish like salmon are idea for en papillote, but I just prefer pan searing/braising, or poaching salmon.

    Works great with tilapia. A little wine in the pouch with celery, carrots, and some blackened seasoning. Cut the parchment paper into the shape of a large heart. Gold in two, place a bed of vegies in one side with the fish on top. Easy now to fold over the edges and a little wine in the pouch now and place on a cookie pan. 20 to 25 minutes and yummie. Wild rice on the side.

    Not sure why they are putting olive oil on the vegetables...once u place the salmon directly on top of the veggies, the natural oils from the salmon will drip all over them.

    I love doing these....but the carrot and broccoli one takes a lot longer they were still raw. I was best off boiling those separately. I also had to use a lot more olive oil than just a drizzle xx

    Tear open a paper sack. Wet it completely. Wrap fish with spices. Cook medium low heat on grill. When sack is dry,fish is ready.

    Iโ€™m not a fan of salmon, any suggestions for another type of fish that works well with this method? I did this technique years ago and liked it, but I canโ€™t recall what kind of fish/protein I used.
