Artichoke Spinach Dip (Bacon Wapped) Chicken

Had the idea for this little gem last night:

4 chicken breasts

1 package of bacon

Spinach 4 cups

4 oz Cream cheese

1/4 sour cream

1/4 cup Grated parmesan cheese

2/3 cup Mozzarella cheese

.5 cups Artichoke hearts in water (drained, chopped, and squeezed to release extra moisure)

2 cloves Garlic (minced)

1/4 tsp Black pepper

1/4 tsp pepper

629 calories: 5.5g Carbs/40.2g Fat/55.6g Protien

Note: Serving size is placed at 1 breast but i could only eat half a serving.

1. Wash and hammer out chicken
2. Wilt spinach in skillet
3. Combine all the cheese, garlic, sour cream, artichoke hearts and spinach (season to taste)
4. Spread artichoke dip on flattened chicken, roll and wrap in bacon (I used at least 5 toothpicks per breast to hold the bacon in place)
5. Cook on grill until internal temp of breast is 165 degrees F and bacon is crispy.
Note: this step could be done in oven but the grill gave it a really nice flavor.
