    Fully addicted and I have no regrets! Love these for meal prep and I love switching up the filling too! Enjoy! Serves: 6 Cooking Time: 2 Hours ### INGREDIENTS * 5 Eggs * 1/3 cup Sour Cream * Splash of Milk or Cream * 1 cup Grated Pepper Jack Cheese * 1/2 cup Red Pepper, diced small * 1 tsp Salt n' Pepper (each) * 1 tsp. Garlic Powder * 1 tsp. Olive or Avocado Oil * Water for Slow Cooker ### INSTRUCTIONS 1. Dice the red pepper and saute for 4-6 minutes in a frying pan with your oil till it becomes tender and slightly browned/ charred. 2. Grate your cheese and set aside. 3. In a blender, combine 5 eggs, a splash of heavy cream or milk, seasonings, and the sour cream. Pulse the mixture together till it is thoroughly mixed and a little frothy. 4. To add the cheese, you can either divide it evenly into the 6 jars or stir it into the blended egg mixture before pouring everything into the individual jars (just don't blend the cheese). Then fold in the red pepper (or any other "add in's"). 5. Pour the mixture into the 6 jars and fill each jar about 2/3's of the way full (the egg will expand as it cooks). 6. Secure the tops and lids onto the jars thoroughly and place into the slow cooker. 7. Fill the slow cooker with water until the water covers the tops of the jars. Place the lid onto the slow cooker and allow them to cook on low for 2 hours. 8 Remove from the slow cooker with tongs or waterproof oven mitts. Allow them to cool a bit before opening (the glass needs to cool slightly anyways for you to open the jars) then refrigerate for up to a week! ### NOTES Remove the metal lid and reheat in the jar on half power for a minute or so. I like to poke a few slits into the middle of the egg to help it heat the center better. You can also pop out of the jar and reheat in a separate bowl or plate as well.
