    I recently made a post about using sugarfree Mrs. Buttersworth syrup for pecan pie filling in /r/Baking , and I decided to boil it down to its 50% volume and use it in place of corn syrup in the pie filling...and it worked! The taste is awesome. Here is the result Here is the pie instruction. Super simple. You are free to use regular pie crust and sugar, though the sweetner blend I use here is easy to acquire and absolutely zero calorie and safe. Crust(9'' square pan): 0.5 cup of almond flour 1/3 cup of coocnut flour 2 tbsp of Stevia-Erythritol sweetener(equal to 4 tbsp of sugar) 5tbsp of butter 5tbsp of oat fiber(gives that flaky flavor that almond, coconut flour lacks) 1 egg -Make the dough like you would with regular pie crust and rest it in the fridge for 15 min. Filling 1 bottle(3 cup) of Sugarfree pancake Syrup(made of sorbitol) 5tbsp of Stevia-erythritol sweetner(equal to 10tbsp of sugar) 1/4 cup of butter 4 egg 1tsp of vanilla extract 1.5 cup of pecans. Instruction: Boil the syrup in the heavy bottomed pan so that it reduces half in volume(1.5 cup). Sugarfree syrup has sorbitol which only has 65% sweetness of sugar so you can't use it as it is. It also has xanthan gum, a thickner, so boiling water content away helps achieving thicker consistency. Beat egg in a separate bowl. Melt in sugar/sweetener in boiling syrup. Slowly drizzle the syrup in egg. Add butter and vanilla extract. Baking: Preheat it at 350F. Grease the pan, line your pie crust, then fill it with your filling. Bake it for 1 hr. EDIT: didn't realize I didn't put pecan. I m stoopid. 9 servings. Calorie: 274 kcal. Carbohydrate: 5.6 g. Fiber: 2.3g. NET carb: 2.3g Protein: 6.6g. Fat: 26.5g

    This looks fantastic, and boiling down sugar-free syrup is a really creative solution to get a better consistency. I will need to try this.
